Apricots, on the other hand, start to make their appearance in the early part of June and continue throughout the month, providing a slightly tart and wonderfully fragrant fruit that is ideal for jams, baking, and fresh eating.

The Historic Fig Trees of Aravada Springs

One of the most fascinating aspects of Aravada Springs is its historic fig trees. Planted by Great Grandpa Luke Whitney in the early 1900s, these trees are a living testament to the ingenuity and perseverance of our ancestors. Grandpa Whitney transported these fig trees from California by train, and they were then brought to Aravada Springs by horse and wagon. Today, these century-old trees continue to bear delicious figs each summer, typically ripening from mid to late July.

Recipe: Fresh Fig and Goat Cheese Tart

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 1 cup fresh figs, sliced
  • 4 oz goat cheese, crumbled
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and transfer it to a baking sheet lined with parchment paper.

Ingredients:

  • 6 cups fresh peaches, peeled and sliced

  • 1 cup all-purpose flour
